Winemaker Ernst Loosen and our Export Director Matt Giedraitis just finished up their tour of the Baltic nations this week. On April 16th Ernie gave an evening presentation for 20 people at Rumours Restaurant in Tallinn, Estonia.

Foodie Friday – Indonesian Chicken & Villa Wolf Gewürztraminer

It’s Foodie Friday! Try this recipe for Indonesian chicken and green beans, submitted by Todd Hudson of the Maverick Institute.

We paired this recipe with our Villa Wolf Gewürztraminer and the combo was a huge hit. The Villa Wolf Gewürztraminer is clean, fruity and wonderfully light on its feet. It shows off the aromatic charm of the variety without being heavy or ponderous. It has a deliciously juicy texture and a delightfully delicate aroma of spice and fresh roses. It’s very refreshing to drink on its own and makes a perfect accompaniment to spicy Asian cuisine.

 

Indonesian Chicken and Green Beansindonesian chicken

MARINADE

juice of 2 limes

2 tablespoons double black soy sauce (If you can’t find this at your grocery, mix 2 teaspoons of regular soy sauce with 1 teaspoon dark molasses)

1 tablespoon cornstarch

1 tablespoon light soy sauce

 

SAUCEVillaWolfGewuztraminer2011Bottle

Juice of 2 limes

2 tablespoons double black soy sauce

4 teaspoons brown sugar

1 tablespoon turmeric

1 cup chicken stock

 

OTHER

1 lb green beans, washed and cut into bite-sized pieces

4 boneless, skinless chicken breast halves, cut into bite-size pieces

4 tablespoons olive oil

10 garlic cloves, minced

2 tablespoons minced ginger root

1 small onion, minced

 

DIRECTIONS

1. Marinate chicken for 2 hours.

2. When you’re ready to start cooking, make sauce.

3. In a wok, saute chicken in 2 tablespoons of olive oil until chicken turns white and is cooked through. Set aside.

4. Heat remaining 2 tablespoons of olive oil and saute garlic, ginger, and onion until soft.

5. Add green beans and stir fry until crisp tender.

6. Add sauce. Bring to a boil.

7. Add chicken pieces and stir to cover with sauce. Heat through.

 

Serve over white or brown rice.  Serves 6.

If you’re a Dr. Loosen fan, you may be interested to know that Ernst Loosen also makes wines under the J.L. Wolf label.

Founded in 1756, the J.L. Wolf estate was a very successful and highly regarded winery for more than two centuries. It entered an especially glamorous era with the construction of its Italianate estate house and villa in 1843. Ernst Loosen took over the vineyards in 1996.

In 1996, Ernie took over the historic J.L. Wolf estate so he could make traditionally crafted Rhine wines to complement the Dr. Loosen Rieslings he produces in the Mosel. In the classic style of the Pfalz region, J.L. Wolf wines are more full-bodied than Mosel wines, with higher alcohol and rich flavors of ripe fruit and stone.

The Pfalz region lies between the Haardt Mountains and the Rhine river, directly north of France’s Alsace region. As in Alsace, the mountains protect the area from harsh Atlantic weather, making it one of the warmer and drier areas of Germany. In this climate, achieving full ripeness is possible in nearly every vintage.

To preserve the naturally high quality of the vineyards, Ernie emphasizes sustainable viticulture, gentle handling during harvest and traditional winemaking techniques in the cellar. This enables him to produce pure, mineral-inflected wines that express the authentic terroir of the Pfalz.

J.L. Wolf: Estate-Grown Rieslings

J.L. Wolf uses an unofficial, Burgundy-style classification of its vineyards. Typically, two wines are made from each J.L. Wolf vineyard—one in the traditional dry (trocken) style and one in the fruity style, with residual sweetness. Only the fruity wines are labeled as Prädikat wines. In most vintages Wachenheimer Kabinett, Wachenheimer Belz Spätlese and Pechstein Auslese are produced.

Villa Wolf label is a value-priced line of varietal wines that show the true character of each variety as it is grown in the warm and sunny Pfalz region. Villa Wolf wines re made from J.L. For the past several months we’ve been doing a “Love it With Loosen” pairing suggestion each Friday. Starting this week, we’re going to include those suggestions here on the blog as well. Enjoy!

This week’s “Love it with Loosen” is actually a “Wow with Wolf.” Expertly prepared and beautifully photographed by Daniel Prince, this recipe rocked the table at a recent picnic where the attendees fell upon it like jackals. All agreed it was a perfect pairing with our Villa Wolf Rosé.

Summer of Riesling is Nearly Here!

Acidhounds get ready! With June just around the corner, hundreds of the finest restaurants and wine bars in the Northern Hemisphere are getting ready to celebrate “Summer of Riesling,” from June 20 to Sept. 21 by offering Riesling by the glass and bottle.

In 2011, the original goal was to get participation by 75 restaurants. The final tally: 222,
or triple the goal. For 2012, the goal is 500.

“The enthusiasm was incredible,” says our pal Manhattan restaurateur, acidhound and Riesling fanatic of Terroir Wine Bars Paul Grieco, who created the Summer of Riesling concept and orchestrated the 2011 national program.

“This was not a hard sell at all,” Grieco says. “So many of my colleagues love Riesling and know
how versatile it is with many foods, and they just said sure, we’re in.”

If you love Riesling–or if you want to love Riesling: you’ve got a lot to look forward to. Restaurants and bars will be offering special flights of Rieslings, tastings, Riesling dinners, and filling their wine lists with very special bottles.

If you’re in the wine trade: get in on the action! Participants get publicity and support, including special “Summer of Riesling” t-shirts, temporary Riesling tattoos, buttons, window stickers, and lots of information about Riesling.

Quebec TV Station Features Villa Wolf

Our Villa Wolf Riesling got some very nice air time on a TV station in Quebec recently. If you speak French, you can watch it here. The Villa Wolf part of the segment starts at about 03:30.

For those of you who don’t speak French, here’s a translation of the Villa Wolf part of the segment. (And apologies, we couldn’t get the male commentator’s name from the vid. If you know it, please tweet us (@drloosenwines) or post on our Facebook wall and we’ll correct it pronto.)

Nadia Fournier: So, this morning, we are going to try to change some prejudice… because often with whites we like them dry, and we’re a little nervous when a wine is a little sweet.

Man: Like me, sometime, if you tell me it has a little sweetness… I don’t really like that.

Nadia: There is a country where this is not a fault. In New World wines, this can be undesirable because with higher alcohols they can be heavy. Germany has for a long time produced Rieslings that traditionally have a touch of sweetness… therefore less alcohol, since it is sugar that is fermented into alcohol. So, (a wine at) 11.5% alcohol… around fourteen dollars in the SAQ (Quebec liquor stores). In a screw-cap… which is ideal; you can be sure when you buy a bottle that it won’t be corked.

Man: For sure…

Nadia: …and it’s a perfect morning wine.
(Yes) It’s not heavy… it’s sweet…

Man: True. I have to be honest, I was skeptical, I thought, oh… but you don’t really taste the sweetness. And for the summer, on the terrace, my god…

Nadia: It has a “fruit juice” characteristic, but at the same time, some complexity… there are lots of aromas, very perfumed… not too much, just enough, with an acidity that is very refreshing.

Man: So… a wine from Germany, which is gaining ground on the world stage…

Nadia: Germany is a country, historically very well established. Unfortunately, it’s had a relatively small production, very little red wine, lots of white. The worldwide consumption of white wine is growing in the last few years, so Germany is benefiting. And more and more very good journalists… English, like Hugh Johnson, who we’ve talked a lot about, are speaking favorably… and I think the prejudices are falling by the wayside. (So Germany…)

Man: …very good.

Nadia: You should be hearing more about these wines. The SAQ doesn’t have a lot of selection right now… but there is the Villa Wolf, produced by Ernst Loosen, who is The doctor, worldwide… he has his doctorate in oenology…

Man: He’s a pro…

Nadia: …and he is the specialist, worldwide, in Riesling… one of The specialists.

Man: Okay, you can’t go wrong with this wine then.

Nadia: You can’t go wrong. You’re in good hands.

Man: This would give you a taste for it, then you can go explore many other wines…

Nadia: You start with this and then progress on…

Man: I might try just that.

Nadia: That’s great.
